Pedro St. James, or Pedro’s Castle, is the oldest building in the Cayman Islands. The original 1780 house was home of plantation owner William Eden. It served as the meeting point for the first elected parliament; and is known as the birth place of democracy in the Cayman Islands. 1780 is a special unfiltered blend of rums distilled, aged and bottled in Grand Cayman. It is blended by Cayman Spirits Co. with a master blender who is a descendent of the original Eden family that built Pedro.

What a wonderful and unique experience. Our tour guide was such a great storyteller and so passionate about the history of Pedro St. James. Quick tip - get there a bit early to catch the sunset from the restaurant next door. It is STUNNING.
This tour was so much fun and extremely educational. Mr. Stacy our tour guide was phenomenal, he was extremely knowledgeable about the history of the St. James Castle.
